it's a HUGE leap from the 40D i've been using, i've only taken a few pictures with it so far, and it's mind-blowing!

I have the 7D...and did the same upgrade from the 40D...although still have the 40D also... That might have to go though, the 5D mkII is slick ....and I would not mind a full frame either...

As for the telephoto I am a little lost and I just don't know how far they reach out past the 55-200. I normally find my self shooting at sporting events like my son soccer game or at my sister in laws paint ball field during games or even at NASCAR races when we go. I have looked at the lens you suggested 50mm f/1.8 II and may add it just to have it and I have also been looking at the EF 135mm f/2.8 with Softfocus.
I think most of the pics I take now are of soccer games: the lens I went to is the Canon 100-400 3.5-5.6L and shoot off a monopod. The 400mm with a 1.6 crop factor lets me really reach out on the games. While I would love to have one of the 400 2.8L's, if I spent $7k on that, the wife would not be enthused.... So unless it is bright, I usually have to bump up the iso, even as high as 1600. But the dual processors in the 7D do keep the noise down and then I have also used Noise Ninja when needed.

Shot with the 100-400 all the way down the field...still had to do some cropping, but the files are large enough to handle it.

Even at 1/1000 and ISO of 1600, wish I had shot it a little faster..... always the coulda/woulda/shoulda

Still at a high iso of 500

Beach shot for the fun of it...

These were taken with my "point and shoot" Canon ELPH 300 HS
NO "photoshop"! These were taken with the settings in the camera.

Just picked up a SonyDSC-H55 from work on clearance. It seems like a good point and shoot. Had my eye on it since last summer/fall. Should get some good experience in before going to an SLR
