I'll vouch for Spirit_1100's solution with the tape. My suggestion is to buy the really wide roll of Masking Tape.

I've always gone with upgraded seating. Captains chairs in a standard cab. You get the velour fabric. Dog hair doesn't stick and is easily vacuumed up. Of course you can always go to leather too.
Dog hair may be easier to wipe up off of leather, but I'd be afraid their claws would scratch/rip the leather. I don't have leather seats in my truck so I could be wrong about that (I'm not sure how durable they are, maybe someone could inform me) however I've seen my two dogs (about 25 lbs each) mess up a leather couch pretty good.

As for a solution, I'd try any combination of those suggested. I typically use a shop vac and, if necessary, a lint brush/roller. I tried the rubber glove method on my cloth couch and it worked suprisingly well, haven't tried it on the truck yet but it looks promising.
