Dog Hair on Seats

I've always gone with upgraded seating. Captains chairs in a standard cab. You get the velour fabric. Dog hair doesn't stick and is easily vacuumed up. Of course you can always go to leather too.

As for a solution, I'd try any combination of those suggested. I typically use a shop vac and, if necessary, a lint brush/roller. I tried the rubber glove method on my cloth couch and it worked suprisingly well, haven't tried it on the truck yet but it looks promising.
