It's like a cow vs. a calf (veal). Basically because the bigger the lobster is, the older it is, the more the muscles are moved around and become harsher/ w/e. Anyways with veal they put the calf in a confined area to severely limit the use of it's muscles. This way the meat is nice and tender I think that is why it would taste different/worse
