I see what you are saying but dynos aren't representative of actual on-road conditions either.
While it is true that a closed hood will result in increased underhood temps on a truck that isn't moving, there have been several members on this site and others that put temp probes under their hoods to measure the temps on the road.
The results:
When the vehicle is not moving, underhood temps do rise.
When the vehicle is moving, though, enough fresh outside air is forced underhood that the temps are just a little bit above ambient.

This k&n doesnt show a heat sheild, i suspect it does come w/ one. all my searching has yeilded little results it always brings up everything w/ CAI or cold air intake in it as well as k&n

I have always been a fan of K&N but through my research I have found that the AEM will produce better results. Either way I'm sure you'll be pleased.
