How Much Lift is Too Much?

I currently have a 3 inch body lift and 315's on my 01 V6..
I'm about a week away from installing a Superlift 2.5 inch add-a-leaf in the rear and cranking the torsion bars up front to level it out...
With 315's I can already see how in 4th and 5th Gear the truck has trouble holding speed (especially up hill or in excess of 75 or 80 mph)
If I was to go with the Skyjacker 6 inch Susp Lift added on what size tires should I go with, and then how should I regear?
I know regearing will give me more low-end, but in just a "V6" is it going to take away from the top-end so much where driving on the interstate is undoable??
Any thoughts or ideas will be GREATLY appreciated! thanks

Considering with stock tires and 3.55's you can hit the speed limiter in 4th before it's wound out, I don't see where 4.56's or even 4.88's with big tires would hurt you on the Interstate.
