Would it be easy to put on one of these new engines? (5.0, 6.2, or EB)

Not worth the trouble, IIRC the 5.0 and eco are over $6k just for the motor, then factor in accessories, wiring, etc. It'd be cheaper to find a donor truck which is going to be ridiculously high since it's a new motor.
If you want to make good power, buy a 5.4 out of a junk yard and bolt on a supercharger. easy 425-450 rwhp with good tuning

He does a lot of work for me/my truck, so first he said I could take parts off the truck and just pay him a couple buck, but I later asked him if I could have the truck and he said $500 plus cost of repairs and it's mine.

Well for that price (to me) the choice is pretty obvious. But if money allows it I might hang onto the XL for awhile longer. You don't know how long it's gonna take to get the Lariat back on the road. Keep what you know is dependable for daily duty.
But be sure to keep us updated, and pictures of the trucks would be nice too!
