4th of July Cooking

Ok guys post it up. What will you be grilling/smoking this year for the 4th. Tell us all about it and your little secrets you want to share with everyone else so they can try it out.

Have a batch of Home made sausage I made last weekend, a course black pepper & garlic mixture, I'll be smoking that and also have a brisket I'll be doing. Might toss on some pork ribs, a beer can chicken or maybe a Pork Butt as well. Not real sure thou. Will also have some biscuits with home made Jalapeno jelly, Blackberry Jam and Apple Cinnamon Jam.

Only secret I can think of, probably not much of a secret thou, is to marinate the brisket in a trash bag (double them up) fat side down for at least 24 hours. Yes I leave all the fat on my brisket, that’s were the flavor is. It can be trimmed after cooked if so desired. Myself, I love the fat and never trim it off. Best part of the brisket is that crusty outer and smooth silky fat, yummy...woooo weeeeee!!! Now where is my cold Lonestar at?!?!?

Grilling - the usual, hot dogs, hamburgers, brats, etc.

STEAMING - Some Maryland Blue Crabs of course! Heading out Saturday and Sunday morning with my trot-line and about 30 traps. It's been a good season so far, crabs are running great.

I love me some crab. Wish I had a place close to go crabbing.

Looks like I'm loading up the family and heading to SouthernSkrews house!

Honestly though, shrimp, filets and baked potato on the grill. Boring.

grilling 8lbs of fajitas. chicken and beef. 100% angus burgers. roasted corn, & sum redfish i caught last week!

It's basically like making any other Jam/Jelly but I use diced up Jalapeno', red & yellow bell peppers instead of fruit. It's a sweet and a heat at the same time. Yall don't have that in NC? Goes pretty well on Hotdog' as well in the place of relish.

Defianately sounding good so far. I am debating throughing a couple of rack of ribs on the smoker. I will have the grill full of just some good ole grilled chicken. Nothing really speacial at all.

I'm thinking some kind of dawg-fest: Brats, Italians, all beefs, kielbasas, etc. with lots of condiments/toppings.

8 pounds?! thats it?!?!? were having about 20lbs marinated beef skirt steak (or whatever that stuffs called) from the real mexican store!
