long night

long night

well I have a busy night tonight

[IMG][/IMG]

in the pic is a 6lb beef eye of round roast

a 10 lb bottom round roast

and a 8lb pork shoulder

going in for a 14 hr slow smoke at about midnight tonight

yeah lucky bastard I get to start the smoker about midnight tonight, and baby sit it for 14 hours, and spend all day tomorrow walking around like a zombie


I'll be on here all night uploading pics as I go along

mesquite coals with fresh pears for the smoke and a bowl of cheap whiskey for moisture

dry rub with dill, fennel, oregano, bay leaves, black pepper, seasoned salt, dry mustard, thyme

homemade pork stock + a bottle of fosters beer left over from new years

Sounds like you got it down, I am sure it will be worth it. Just have plenty of beer on hand

Looks great. However it is possible to get some sleep during smoking.

For some reason I have both these. I don't know how the hell that happened.

not going to spend 1600$ on a electric oven

nobody in Tucson sells wood pellets

so I guess Im stuck with the old fashioned way

Nothing wrong with that!!!
Actually I don't like the pellet one as much. All the pellets taste the same. At least to me.
The Cookshack is cool though. Crap, I am gettin hungry....
