did my first butter mopping and second batch of pears starting to rain now which is kinda a b!tch cause it makes it hard to maintain temp when the outside temp is fluctuating so much but I will persevere
second herb dusting in 45 min will take a meat progress pic then

will do I usually do this about once every three to four months but I haven't done it since feb because the last one I did was about a 1/8th of a cow I cook it freeze it and then thaw it out periodically the last batch was close to 50 lbs and just finished off the last of it couple of weeks ago, when I get up the ambition I am going to build a brick shelf type smokehouse cause several of my neighbors said the will gladly buy the supplies and what not if I smoke meat for them and it is not much more trouble to smoke alot than it is a little. when I start that project I will be sure to post it here
5 am update pic we're humming along just fine mopped them flipped them, and we are halfway home. 7 short hours from now I will be fast asleep, face down in a plate of wonderfully smoked meat
