I have been converted back to charcoal/wood from gas after eating steaks off of a friends grill/smoker and your are right there is something about the taste of the cooked on that type of grill. The other thing that I am learning is that you don't need to use lighter fluid on charcoal to get it going and that's what actually turned me off about charcoal in the first place.

Right. I don't like the idea or taste of lighter fluid either.

Although I did get used to the taste of diesel when I driving our delivery trucks because I had it on my hands after fueling up and it was normally at lunch time. And before you ask no matter how many times you wash your hands you can not get diesel off.

I use mesquite chips when I use the gas grill....
