Let's start over......
It is my favorite Eastwood movie.

It seems that way. I was counting them last night, but no, what happens is you see it lose one, and then they show it again when they show a different persective to include more of the street. So you see two shots of the same hib cap and this happens twice. But, I am almost certain that one of the caps that came off is back on the Charger when it is on the highway, just before it crashes.

They record the sound of that big block 390 and it is like music as it winds up, shifts and down shifts.

First it was a hopped up big block Charger. Second, if you have seen it you would not ask. A lot of it is in traffic in the hills of San Francisco. Thirdly, He actually catches up several times, there is a lot of oncoming traffic to dodge, plus one of the hit men in the Charger is shooting at him with a shotgun.

Chalk it up to driver error.
Hey! You need to watch the movie, then you can discuss it intelligently!
McQueen was into road racing and had race cars. Back when I was restoring Mustangs, there was some stuff written when some guy discovered the car at a movie studio lot, bought it, and restored it. The story is that McQueen had the car set up the way he wanted it. The engine had a cam and different carburator and he had some heavy duty springs and shocks put on it, along with skid plates welded on underneath.

Back when I subcribed to Mustang Monthly magazine, when I was into restoration, they would write an article about the chase and the cars every now and then. Ford figured out that they could sell a few of the Bullitt Mustangs even now. There is one at the dealership where I go, they are asking $45,000 for it. Someone on here bought one not long ago.

Here's a long writeup about the filming if you want to take the time.
