10% ethanol is creeping into my area too, Wal-Mart and Sam’s (Murphy oil) are all 10%; never tried it yet

Yup, they really are. The Xcal 2 never had canned tunes, so maybe Xcal 3 is SCT's first attempt at doing tuning.

Pretty bad attempt.

Canned just means the tunes that the hand held computer manufacturer puts in themselves. In this case, the Xcal3 is made by SCT and they have included a tune with it which is referred to as canned. Canned tunes are generic for all computer revisions on a given vehicle, thus I'd imagine it's not easy to find a combination that works for all revs. I believe I have TEM7 revision on my computer.

Custom of course is from a third party company who will make a program specifically for your computer revision.
