Ok, I have read numerous posts about the spark plug change on our trucks and have come up with the following for my 2007 5.4L 4x4 with 103,000 miles and original plugs:
Planning to take truck to one of the local Ford Dealers Service Dept where I was quoted $329 (+ tax) regardless of how many (if any) they break.
What I was wondering is if the plugs that the dealer is going to use are ok or if I should request something else? Any other special requests I should request before they begin the work?

From what I read, the main objective for the new pplugs is getting that antiseize agent on them before you put the new plugs in.
I changed the plugs myself and had only one break, had the tool on hand and made quick repair. Following the suggested method of carb cleaner and easing back and forth bit by bit helps a lot. Good luck.
P.S. I had a COP fail +20K from spark plug service. I checked the plug and it came out easily with the anti seize.

For mental relief could buy the SP-515s off Tasca for $90 some ( possibly cheaper than dealer price ) and provide them. Hopefully they will honor that regardless of breaking deal. Run some Techron 20 gallon gas treatment fuel system cleaner for a few tanks for assurance and ease for them. Every little bit helps.
Does that price include plugs also? That's not a bad deal compared to around here. My lowest quote was $695 plus $95 for every broke plug. I changed mine myself and used an impact gun after the first plug broke, only broke 1 more after that. The back drivers side, I fully believe if I could have gotten impact back there that it would have came out intact. I spent $398, which included plugs (sp515), new belt, two new pulleys, new fuel filter (which I would highly recomend you change), 7 quarts of oil and new oil filter, lisle 65600 tool, fuel filter tool and a couple different types of penetrating fluids. I would also recommend you clean throttle body and maf. Made a world of difference in my truck.

If you don't have the tools the price seems fair, I just did mine (130k) it took two hours using a 3/8 impact with a warm engine. I put 515 motorcraft in it from the dealer for 12 bucks each. if you have the lisle tool it's really pretty easy and kinda fun if you like to work on things.
