Service Engine Light

Does the "service engine" light activate (automatically) every 5k miles to indicate an oil change (cycle) is necessary?

Nope, not on 97-2003 anyway. You have a problem. Go to the auto parts store and have it scanned for codes and post 'em here.

Vehicles that have the automatic 5K oil change light do not utilize the CEL light, they have a standalone "MAINT" light
