Looking at the GFX OR9 rims with possibly 295-70-18 Nitto Trail Grapplers for my 04 FX4. I have the Bilstein 5100 level setup on the truck right now.

According to discount tire the rims are 18x8.5 with 35mm offset. He says that I would gain 1/4" on the inside and add 1 1/4" to the outside.

Does this sound right to everyone? Should I expect rubbing issues with this setup?

I think what he is saying is that you will gain 1/4" of clearance on the inner side of the wheel, and the outer lip will stick out 1 1/4" past the stock wheel, which sounds about right. My wheels are very similar to the ones you are looking at, 20x9s with +32mm offset with 275s, and there is still lots of room, so 295/70/18s should fit fine.
