Im wanting to put 35x12.5x18 cooper stt's on my truck with the oem rims i dont know about the backspacing. I have 33x12.5x18 terra grapplers on right now. These tires do rub at full lock. I also have a 3in leveling kit and 3in body lift.

You will be fine. Country Punk on here is running the Cooper STT's on stock 18" FX4 wheels with a leveling kit. I have 35x12.5x18 Kumho Road Venture M/T's on the stock FX4 wheels with 2.5" AS leveling kit and I only have minor rubbing at full lock.
Your OEM wheels are 18x7.5 inches with 5.5 inches of backspacing. Your tires are rubbing the control arms at full steering lock because of the combination of the large tire and the narrow wheel. The Coopers may rub a little worse because of the more aggressive sidewall, but they will still work. If you use an aftermarket wheel, you will eliminate this rubbing. Something like an 18x9 with 5 inches of backspacing is common and would work/look great.
