bfg at's vs. Cooper S/T

All depends on what you're doing with the truck.
The BFG AT is a great tire...looks good, should last for quite a few miles, and is an excellent all-around tire.
The Discoverer S/T is a more aggressive tread pattern (it's more of a mud terrain or M/T tire but not quite as aggressive as the BFG M/T or Discoverer STT) and will be a little noiser on the highway than the BFG ATs.
A more comparable Cooper tire to the BFG AT is the Discoverer ATR (or Dean Wildcat AT). It's not quite as aggressive looking as the BFGs but they work just as good as the BFGs out in the mud & slop.
Both of em will "chunk out" a bit if you drive a lot of gravel roads...the S/Ts more than the BFG ATs from my experience. On highway, they should both get you at least 40,000 miles from a set if you keep em inflated properly & rotate every 5,000 or so.
BTW, if you do do that size swap on your truck, go to the Ford dealer and get a VSS gear that is one tooth smaller than the one you have now. This'll take care of the speedo calibration error from the larger tires. I just did the same size swap on my 97 (4.6L with 3.55 gears) and it's spot on with a one tooth smaller VSS gear.
The 265/75/16 is the same diameter as the 265/70-17 off-road package tire at 31.75-32" and it fills out the wheel wells a little better than those little 30" 255/70-16s. I don't have any noticeable power loss in my truck either so that shouldn't be an issue.
