Okay, going to be getting some new shoes tomorrow and want to make sure I get it right the first time. Depending on price and availability of 8-ply (or better) tires that can handle the weight of my travel trailer, I will either stay with my stock 17-inch rims or move to 20 or even 22-inch rims.
What would be the maximum size of tire to fit, without rubbing or having to make any sort of adjustment to the vehicle, on each of those size of wheels?
Also, what width of wheel would I need to bring the shoes out to the fenderwells and if that's possible to do without the rubbing issue?

We have basically the same truck, I am running a 315/70-17 BFG TA KO on a 17x9 Helo Maxx 6, no lift but I did turn up the torsion bars and have to do a little trimming, the tires are just outside my wheel wells and I have some fender flares on mine. I was running the same tire on my stock 17x7.5 wheel and had no rubbing at all, just the torsion bars turned up.... If you dont want to go to the 35" tire then a 285/70-17 (33") will fit nicely without any modifications at all and will work fine on your stock wheel.

So, how do I know what my stock wheels are width-wise? Are they the 7.5, like yours?
Would that tire (315/70-17) hold up to towing a 7500# travel trailer? Is it built for it...such as ply and load ratings?
How difficult is it to crank up the torsion bars and is there a step-by-step procedure documented anywhere? Does this level the truck like when people are speaking of installing a levelling kit? Is this just for the front end?

The stock wheels are 17x7.5 inches wide. As far as the load rating, you will need to check the manufacturers website to make sure. As far as cranking up the torsion bars, all you need is an 18mm wrench. Follow the torsion bar back to the frames crossmember and you will see the adjustment cam and bolt. Just crank up each bolt the same number of times and get the front end aligned.
Here you go. The adjustment key is covered in surface rust and you can see the adjustment bolt on the bottom. There is one on each side of the truck. The torsion bar (the long round bar in the pic) is the spring for your front suspension. Screwing the bolt in increases preload on the torsion bar and lifts the front end of the truck. Screwing the bolt out decreases the preload on the torsion bar and lowers the front of the truck.

Do yourself a HUGE favor and go to the Towing forum. I don't think you will be very happy towing 7500# with 35inch tires and stock gears. Even a 33inch will dramatically drop your performance.Read all the posts, ask some questions. There are a lot of very experienced guys there that will give you an honest opinion.
