I have an XLT that I just purchased and it has been upgraded to a Harley Davidson setup.
I am not sure if my truck has been calibrated to accomodate the new wheel & tire size.
What do I have to do to make sure I am getting an accurate reading of mileage and speeds.
I just go this truck 1 week before Christmas 01'.
Wheels are 18" original Harley Chromes.

All the OEM Harley truck came with 20 inch wheels. If you have 18's, they are replica wheels. Nothing wrong with that. The easiest thing to do would be to have a local police officer or deputy to clock you with radar. When I was in patrol, people asked me to do that all the time.
Get on the interstate and reset your trip odometer at a mile marker and then check it at the next. You should show going exactly 1 mile. Best to do it for a 10 mile test.
Another way is to use a stop watch, get on a flat stretch of road and set the cruise at 60. Start the stop watch at a mile marker. Check it at the next mile marker. You should go 1 mile in 60 seconds. If you do 1 mile in 55 seconds you are actually going 65. 50 seconds you are actually doing 70.

Calibration
Thanks for the tip, I was going to perform a mileage test by distance. It is nice to know the time and speed variation you posted. When I am doing 60 on the road to and from work it seems that I am cruising faster than the rest of traffic.
