raising compresion

Hey, i'm thinking about switching a 5.0 to e85, and if i do that i want to raise the compresion. From what i've been finding, e85 fuel can support around 11:1/12:1 compresion. I don't think i want to go more than 11:1 just to be safe. I've been told to get domed pistons, but have seen some real mixed feelings about them, and instead of spending a few hundred on those, could i not just cut the deck height and get smaller gaskets?
