Summit Racing has a pretty cheap "dry" probe dual fan controller from Derale, you can adjust the turn on from I think 160-240. The dry probe allows you to place the probe in the radiator fins without having to drain the coolant and place a "wet" type probe into the cooling system. The controller also has the AC clutch override to turn on the fans when you turn on the AC. You can go for broke and get a SPAL controller, which is fully programmable but you either have to tap into your vehicle coolant sensor or install a "wet" type probe.

As far as eBay fans, its hit and miss you may get a good set you may not. You did not specify whether you have the 4.2L, 4.6L, or the 5.4. I have a 01 Screw with the 5.4 and i plan on getting two 16" fans, possibly Derale fans I have heard good things about them. Like i said those eBay fans may last 100,000 miles or 100 miles, it just comes down to how much you want to spend.
Wiring everything is really not hard as long as you can read a basic wire diagram and use either crimp connectors or preferably a soldering iron and heat shrink. Butt splices aren't exactly bullet proof or waterproof, and considering this circuit will be controlling your engine cooling system you really want it to be reliable. Otherwise you may find yourself stranded with an overheated truck because something rattled loose.
Hopefully this helps.

So - consider buying everything you need from these folks - you'd be hard-pressed to find better quality anywhere. Their controller is terrific - download the manual and have a look - lots of info in there on connections, etc.

If you are not a DIY'er, buy a quality kit.
I Don't do cheap or kludgey. You want advice on that kind of install, you'll have to look elsewhere.

Amazon.com
carries the FAL kits. Best price I could find anywhere and free shipping (quick too). FAL fans are very well built. wiring and hardware and and controller are all in the kit. Make sure you get a kit w/brackets that fit your truck, or else you will need to fab some. I put their 295 (universal) kit on my 03 Ex. Had to have a friend help me make up some brackets. Took quite a few hours. I also mounted the controller inside the cab, on the frame up behind the glove box (dry, clean and climate controlled in there).
Unless you know what you are doing, I would get a kit. Which is why I bought a kit
