Post the FULL text of the code definition, from several sources if possible.

P0125 - Insufficient Coolant Temperature for Closed Loop Fuel Control

Seems the engine coolant never gets hot enough for the ECM to initiate normal fuel control mode.
Either the temp sensor or the thermostat would be a guess. What does the temp gage on the instrument panel read?

the temp gauge on the instrument panel used to read halfway between hot and cold, now it never gets close to halfway between hot and cold

Have you checked the coolant level? How old is the thermostat? Have you tried measuring the coolant temp after the engine is warmed up? If you rev the engine when it's cold (1st thing in the morning), does the UPPER radiator hose swell & get tight?

no i havent checked the coolant temp or squeezed the upper rad. hose when its cold, but how cold do i check it? i live in north pole, alaska. its -30 degrees outside right now haha. im going to just replace the thermostat, easy fix, cheap too if its not that then i'll explore more. hopefully its that.

You should add your location to your profile so it always shows. It could have a significant impact on the answers to any other questions you ask.

Generally, when someone refers to a vehicle as "cold", it means 30-100°F. In this case, it means ANY temp at which a good thermostat would be closed.
