It has been some time since I have posted any information about the problem. Some of you have been tracking this and I wanted to post an update.

It has been almost a year now and my rough idle problem has not returned. My mechanic thinks that the 02 sensor was probably not a good one new but would stay in spec most of the time not triggering a Check engine light. I have gone almost a full year without any problems in regards to the rough idle. Good thing I bought the extended warranty for the truck. It's has paid for it self already.
