Changing Oil FYI
Ok, I think I've mentioned how I am uncomfortable with the recommended oil for my new truck. I checked with the dealer to find out that surprisingly the head is teflon coated and that anything thicker would gunk up and destroy the heads of the v-6 motors.
Even further is that I am a die-hard Mobil 1 user. But it seems that Ford is actually not trying to get you to use Motorcraft just because they make money off it. So thus, Motorcraft it is. Im sure if I wired a pyro gauge it would probably be fine.

That sucks, I bought my truck new in 02' and as soon as I got it home I drained the oil and put in Mobile1 5w-30. I have been running that oil in my truck for 99,678 miles so far with no issues. Even when I take it in to the dealership for big maintenances I supply them with the Mobile1. Surprisingly they have always been cool with that. The only thing they ever reemed me about was when I supplied them with the Fram oil filter. The tech refused to put that on . I was angry at first but glad he convinced me to stick with the MotorCraft oil filter.

Mobil 1 has several 5W20's now - the EP is top of the line. Wallymart has it for $6.46 a quart. The regular synthetic Mobil 1 is $5.98 a quart there. They also carry the filters.
Chris, what you are doing is probably fine. Truthfully, the 07 would probably not have a problem with 5W30, but Ford recommends 5W20 for several reasons, I just feel more comfortable using the recommended grade.

No teflon - they're blowin smoke
Let's assume that it's true for a moment - that makes their case a non-sequitur, since teflon renders a surface even less likely to have another substance adhere to it .... think about it... but not too deeply, because there IS no teflon
Use the recommended lube, like the other good folks in this thread suggest.
Mobil1 EP is highly regarded, if a little pricey.

Today's oil requirements and technology are driven just as much by emissions and fuel economy requirements as by actual lubrication quality.
My manual says that to protect my warranty, use Motorcraft 5W20 or equivalent 5W20 that meets Ford spec WSS-M2C153-H. The 5W20 recommendation is to cover their butts for emissions and fuel economy. Would I use a different weight? Maybe - but I would not use anything that's any heavier than 5W at the bottom end or any lighter than 20 at the top end. Would I use straight dino? Nope. Semi-synthetic or full synthetic only.
