Stacking blocks is a major No-No... Under heavy braking or acceleration there is a possibility of the blocks unstacking, causing major damage as well as the possibility of an accident. The other problem with adding an extra 3" block (on top of the existing 2") is that it creates a longer lever between the axle and the springs creating "Axle Wrap" under acceleration with puts major stress on the U-Joint at the pinion end of the driveshaft. Axle wrap is a distortion of the arc of the spring, instead of a c-shape from front to back, you will get an s-shape from front to back as the pinion is forced up from the torque. To compensate for axle wrap, Hot rodders have been using traction bars for years and from what I can gather you are looking for a "Budget" controlled lift, so traction bars are an added expense... In my opinion (as ****ty as it is) I would use the 3" block and go with an Autospring 1.5" AAL. I have a 2-1/2' level and the 1.5" AAL on my 04 S-Crew and the ride is not noticibly affected.
