I think I am going with these subs.

I have a 3 questions. It says it reccommends 250w but if i am putting two in do i double it?
Also What kind of wiring do I need?
What is a good cheap amp to power these?

crutchfield is a rip off IMO, try sonicelectronix or woofersetc

Yes it is. Sonicelectronix has this weird deal with missing or scratched off serial numbers so I've stayed away from them when some Focals I ordered were missing the numbers. Woofersetc has been a good site. Try ebay also.

Well a guy at an audio store quoted me $650 for 2 memphis 10s and an amp with a custom box. Trying to get under that lol.

Well that guy is an idiot. Build the box yourself.

Memphis PRs? What amp? What box? Guarantee you, I can find you it for a lot cheaper.

Pretty sure they are PRs. He didnt tell me what amp. He said he was going to build a custom box to fit under my back seat. Installed $650. Should I do it myself or should i let him do it?

all my stuff from sonicelectronix has the serial numbers on them but they were an authorized dealer of those brands too, woofersetc is a good site as well, first site i saw that sold RE audio too...

PR's should only sell between 79-99$ depending on 10's and 12's. The amp you would use would be the 500D. Same setup i have, But im running the older amp and 3 10's. I would check online for boxes to get an idea, they make prefabs to fit under the seats.
Memphis is great stuff, bad thing is its not sold online and normally only 1 dealership in an area. So no way to guage pricing.

Well if I went with that setup what kind of wiring am I looking at? I have seen 4-10 gauge and I am clueless. Is there a kit with instructions I can buy?

if you mean power wire 4 guage, 10 or 12 guage would be fine for speaker wire

I wouldn't go with that particular Infinity but if you want to stay within the brand try these. They are rated at 350 watts RMS. I have one in my truck powered by an Alpine amp and I love it. I'm knocking anyone's judgement here but this is a difficult question to ask here on the forum simply b/c like's something different. If your not looking for a show car system than Infinity is not bad plus it has a 3yr warranty. A lot of people think Crutchfield is a rip off. Maybe they are, maybe there not. One thing I will tell you is that I appreciate the service and return policies so I will pay extra to avoid bullchit.
