Lots of possibilities here.

Has this been a problem that slowly happened or was sudden?

I'd start with the quick checks and go from there. Pull a plug and make sure you have a good solid fat spark. If it seems to be rich then it's more probable the spark is weak than a sudden fuel system change.

Was your old fuel pressure regulator bad or did you simply change it to eliminate it as a cause?

Does it idle fine and rev up smooth in nuetral/park? I'd look into cleaning the MAF sensor.

There are a number of things that could cause it, but I'd check for spark before anything else.

It's rare that the entire fuel system have major problems with little warning. Usually it's a gradual thing, or something that affects only specific driving conditions.

Check plugs and ignition stuff first, then go from there.

If you have something to check them with, check the wires for resistance also. If everything else is in good tune a bad primary or a few bad wires can cause similar symptoms. I had an ignition box fail and disconnected it. I had a slight sputter a couple of times after that, but only when the truck was cold and the weather very humid.

The primary wire had huge resistance from when the box fried. It even gave some spark at the plug, but after seeing the resistance it's hard to believe the truck even ever started, much less ran ok.

Changing parts is the least effective & most expensive way to fix anything. Get a Haynes manual & a cheap digital multimeter, and TEST things instead of replacing them. I'd test the TPS, the MAP, the ACT, & the ECT.

Also, check this:

This is very important, since you've been messing with them.
