tubby, don't know exactly what you are looking for in a "system", but if you want to buy the individual pieces you can get some really good deals right now. Panasonic, Blaupunkt, and some others make good quality DVD players at low prices. Check Ebay for the LCD monitors to go with it. You can also find some "DVD in a bag" type kits on Ebay if that's what you are looking for. I am getting my video equipment piece by piece and am really pleased with the results. See my signature for the model numbers.

Before I bought my Harley truck I had an Alpine CVA-1005 and the DVD component in my Bonneville. I switched to the Kenwood you see in my signature because I got a fantastic deal on it, and I liked the touchscreen better. This new unit is a lot easier to work with, and it has a TV tuner and DVD player built right in. The seperate "brain" module and combination of A/V inputs and outputs will allow you to run another monitor (or 2) in the rear. Since it already has the tv and DVD built in, it's only a matter of adding a playstation or whatever to it.
The downside is that this thing is expensive. I've seen the unit in stores for $2800, but online for around $1900. The Alpine I had before was a smidgen cheaper, I think I got the head unit for $999 and the DVD for $600. Ebay generally has some good deals on this type of thing. The LCD monitors themselves are pretty cheap by comparison. Clarion and Panasonic also make models like this, but I haven't looked into those.
What's nice is that this completely replaces the factory head unit with a regular DIN sized peice that has a 7" monitor, TV and DVD built right in. I liked that I only had to get 1 piece and was done. They also make other stuff for it, navigation consoles, Siruis Satellite radio, etc. Didn't cost me anymore to have this installed than a regular radio would have been.
I know you said something about saving money, and this is the opposite of that, but I just wanted to show you what is out there.

I've got a roll getting developed now. I took some pictures with a friend's digital, but they looked pretty bad. Borrowed that same friend's SLR camera, and the pictures I took of the truck's exterior came out excellent. Hopefully I'll get the same results for my stereo.
