A friend of mine lays hardwoods flooring for a living.
One job he did for some high-falootin' types, when they moved the people's double-sided ss fridge, they accidentally put a small scratch mark near the handle. The owners freaked out and demanded that he replace the fridge with a brand new one.
My friend agreed, but only under the condition he was allowed to take the old fridge. If their fridge is getting replaced, they shouldn't also get to keep the old one and profit from the sale of it.
My buddy needed a new fridge anyway, so he took the one with the scratch in it. (since he paid for it)

The contractor getting the old a/c would essentially be the same way with an insurance company. However they might not care about messing with a/c parts and just let you have it. But for instance if you total your car and the insurance pays for it they then own the salvage. Basically you are selling them the old car to the insurance company or in this case the old unit to this guy. I would let him have it if he wants it.
That being said I would highly reccomend you get something in writing from this contractor about his promise to replace it in a month or less. People tend to forget or change their mind about things as time passes!
Also most insurance policies have a clause that claims be reported in a timely manner. This is so the insurance company doesn't miss out on being able to collect from the liable party because they have had time to disappear, too much time has passed, etc, etc. I do not know what that amount time is with your or your neighbors policies, could be 30 days could be more, but if you try to work it out with this guy an it does not go through then it is possible that you would not be able to file on your neighbors insurance if they were not made aware of the situation in time?
