Barbecue.......

Ribs or Brisket ?

Wet or Dry rub ?

I need to fire up the smoker this weekend.

Being that I live right outside of Memphis, TN its RIBS and its WET. Its with Rendevous(dry) or Corky's(wet) best ribs in Memphis.

ribs dry, brisket dry , cooked fat side up...I will be attempting to cook a pork butt this weekend, and make some Carolina Pulled pork sammmiches....yummo

Ummmmm, Corky's!!! The highlight of my trip to Memphis, and yeah, I did visit Graceland! lol

I also like KC style brisket.

But my fave is carolina style pulled pork, with cole slaw, sprinkled with dry rub and doused with vinegar sauce and some Frank's Redhot.
