Auto or manual? With a manual temps don't really matter as much as they do with an auto. In an auto the fluid is also acting like a coupler which in a manual all its doing is lubrication and cooling. It also depends on what kind of climate you live in to determine your temps. Usually when driving unloaded you should see anywhere from 70-90* above ambient. It also makes a difference if you have an auxliliary cooler or not. When towing anything 180* or less and you're fine. You can run it up to 200* for a short time, but anything over that and you're in the red zone. If you see 225* ever, stop and let it cool down immediately and then try and find the closest shop to get the fluid flushed. During the winter in Iowa when I used to live there I wouldn't see my trans gauge even get to 100* for about 4 months. Normally on mine driving around out here with slower speeds and lots of hilly roads I see about 150*.
