lol in that video was there a crossover pipe at all? like an x or h pipe?

i asked this in another thread but what you think about power and gas mileage with true dual straights and rear cat delete compared to my magnaflow 14" di/do?

It'll be way louder, should probably have the same performance though no muffler tends to drop mpg a little. Removing the rear cats will gain you 0.2mpg most likely, it did for me. And I got a little low end increase.

I have the exact setup you are looking for and there are clips in my sig. The difference in power with exhaust is really not noticable no matter what you do, as long as you dont go over 2.5" with true duals. Your MPG may drop some because you like the sound of it and want to hear it, but other than that it should stay the same. My truck only has 2 cats from the factory.

won't removing your stock muffler lead to a slight Lean Condition? i know Intake kits do , but am bite scared since thes 3v can go very lean with any slight air restriction increase... or the 04 are diffrent than the 07?

Mufflers have nothing to do with running lean or rich, headers and cats are the only parts that play that kind of role. 2004 and 2005 truck came from the factory running near lean, 2006+ are better tuned and dont run lean, though you must have a custom tune for any 3v engine for an intake. A muffler change/delete will not harm anything except your ears.
