is it that much better to do true duals then si/do?
what are the differences and can I do true duals off the stock headers?

Its not better to run true duals over SI/DO, the SI/DO is better due to more scavenging/pressure.

You will gain a sweet sound, and a modest increase in fuel economy. No performance gains.

my 2.5'' true dual setup outperforms my oem setup hands down, but I'm also running aftermarket longtube headers.

Factory longtubes ah that would be sweet, save some money!

My 2.5" true's improved economy by .9mpg, but my low end sucks, though high rpm my truck will climb the speedo well. My 0 - 60 is 8.5 - 9 seconds, pretty bad! Need a tune and CAI to get down to 6 - 7.

yeah either go si/so 3" or si/do 2.25"--i've got a si/so 3" mandrel bent system and there was a big difference in my low end power
