Arrow need some feedback

OK, so i have chosen to go with the Flowmaster 40 series and Supreme High-Flow cats. Should I run 2 separate 40's, or get the 40 with the DI/DO option. I am looking for a deeper sound that the 40 gives, but also looking for less restriction. I currently have a cheap SI/DO muffler on and want to decrease the restriction. Should I go with the DI/DO or just get two separate 40's and run it that way? I will have added Gibsion Headers before this exhaust will be installed, or at the same time atleast.

Forgot one thing........How much time/mechanical knowledge will it take to install the mufflers and cats? The headers? I have above novice knowledge, and would be having someone with intermediate knowledge helping me out.
