We appreciate your consideration of our products and services. Given your situation, I'll try to provide some recommendation for you.
First, removing the cats isn't beneficial anyway so we're good there. The catback exhaust systems provide enough increase in flow without severely sacrificing low RPM torque. We also generally don't recommend CAI kits as they've not show to provide any significant gains over the stock induction system... with one exception. The snorkel that protrudes into the fender is the "bottleneck" of the stock intake system. Removal or replacement of that individual piece provides the same performance increases as an entire CAI kit at a fraction of the cost.
You didn't indicate that you do any heavy towing, so I'll assume for the moment that you don't. My best recommendation are as follows:
If you decide to pursue the CAI kit and do NOT tow, I would recommend going with a custom 87 Performance program (for daily driving), a custom 93 Performance program (for more aggressive performance), and leave the original Transmission Only in place. If you do tow, I'd replace the Transmission Only with a custom 87 Towing program.
If you do not go with the CAI kit, I'd still go with the custom 87 Performance program and just leave the original 87 Towing and 93 Performance programs in place.
The programmer is $399.00 plus shipping and custom tunes are $30.00 for each level.

Right! The ones who disagree, probably don't really know too much about the "system", do they? Bill expresses his opinions based on 20 some years in the tuning business. Other opinions often come from advertising claims made by product manufacturers.

I have a question. If the CAI doesn't significantly change anything then why does it, in certain applications, cause a lean condition that needs to be tuned for?
Because the design of the area where the sensor sits is different so a false information is sent to the computer and the computer incorrectly changes the AFR. So that is what I read and it sounds plausible to me.
As JMC mentioned, more air without the fuel gets you lean...add fuel = more frijoles.
