Has anyone had any CHT problems?

You were probably running in "fail-safe" mode. And, it sounds like you were hot for real. If you had kept on driving it, it probably would have shut down.

I'm with Paralyzer on this, why not change the thermostat? They're pretty cheap. In the past, I've done this and being Scottish, saved the coolant in a clean container. Then, I just poured that coolant back in when I got everything hooked back up.
