I am currently running Firmware version 20 and Calibration version 23 on a 2005 XLT. I hear all of this talk about the updates being unstable, how can this be determined? Also I have heard something about a 4th gear stuttering problem as well.

It currently shows that firmware version 22 (Release) and Calibration 27 (Release) are the most current.

I guess I am just wondering if there is any benefit to updating the firmware and calibration from 20,23 to 22,27

I'm running 20/23 and have the shudder in level 3, I haven't tried anything higher, but I have gone back into the calibration versions and still have the shudder. You'd probably do best by calling edge tech and discussing it with them as to which versions will be best for your Hex code application.
