Electric Fan Question

I have looked around but no one talks about this, anyways I'm doing a custom electric fan conversion, so far only seen one of the one I'm doing on here or anywhere for that fact but anyways am doing a factory dual windsor fan setup, has two fans but one is smaller slightly then the other, so question number 1 - the clutch fan stays on at all times hence belt driven (pulley) so could I or should I set up the small fan to be on one key on accessory or would the truck stay too cool, I know people stated that they do both fans ro turn on at 195-205F. Also should I run two fan controllers or one, always see both fans driven on one with no issues so I can only think it'll be to drive them at two different Temps but wanna make this as factory like as possible and am good at wiring, just want some input and not to keep the clutch fan
so basically
1- wire both at two different Temps?
2- have both on, on accessory mode/key on
3- have small one on, on accessory and big fan on at certain temp / AC on
