Getting the right stance...
Your stock gears should be able to handle 35s untill you can afford to re gear (at least that's what my research has told me). Another thing to think about is if you re gear you might as well put a selectable locker in at the same time if you plan to off road much. That way you only tear it all apart once. From what I've been able to find you only want to lock the rear on our trucks.
Did I read correctly that Trail Grapplers are heavy as hell? Like quite a bit heavier than most tires like it?
They are heavier. But they also last longer than everything else and the weight is part of what makes them so durable and last so long with the 10 ply sidewalls and good internal structure.. 35s are around 75 lbs or something like that, if I remember right. But another reason for getting those 34" 295/70/18's is easier on the trans, less need for gears, and less heavy.
Honestly, regearing a 4x4 is a massive turnoff for me, and I'd go smaller to avoid that. I only have to worry about my rear end cause I'm 2wd, so I'm looking forward to regearing, but it's gonna cost me $800 vs. $1600 plus for you.

I'm sure they last fine, as it really depends on who's driving, but it seems that the Toyo and Nitto MTs last the longest. Either way, I'm sure you'll be fine. How many miles did you get out of the current set?
Im not sure honestly. They came on the truck when I bought it with 78k miles and now I have 91k and they honestly need to be changed but they have a little tread left. I would like to find a set that I can get 40k or more out of considering they cost so damned much.
