Is it possible to pull out the backrest on the back seat of a crew cab for the 2005 model year? Looking at getting seat covers for it and to make the install a little easier...

there should be a "sticky" or "how-to" on this, there are a few videos on youtube on this as well... there are two push clips behind each end of the bench seat, once you pull those out the whole seat back will come up, you must remove the middle seatbelt mount before doing this though...

 

Found a good clip on youtube covering my year, also found one on later models which looks like Ford added a latch setup to hold the backrest on.
