truck overheating?

My Supercharged F150 has the heavy duty Saleen radiator in it and dual electric fans that work.

It has been 115 degrees here for 4 days. If my truck sits in traffic....not moving for more than 20-30 min...a bell goes off and I look at my temp gauge and I see it sweep over to overheating. If I shut the truck off and let it sit for just a min or two and start it back up, the temp gauge immediately goes back to normal operating temperature.

Would this be a bad sensor? Seems like if the truck is heating up, it would be gradual....not just a quick sweep after sitting or barely moving for 30 min. It also seems like it would stay hot and not cool off that much after sitting for just a min or two. Ideas?
