I haven't even put 15,000 miles on my truck in the almost 4 years that I have had it, I last changed oil on 8-30-08 and have a total just over 2500 miles since then.

Just change the fuel filter since you are at 15K, otherwise just keep driving her.

Even if I don't drive it 3k miles in that long I would change it after 3 months...

a good rule of thumb is 3000 miles or every 6 months. at least thats what the shop did on my truck after the motor was rebuilt and they were doing it for free so

Your right, I probably should change the oil every 6 months. But it one of those things that I am really not that concerned about since my truck doesn't do very many short trips also its always parked in my garage, and in the winter its parked for 1-2 months at a time, so condensation in the oil is not a big worry.

Change Oil at least every 6 months regardless of mileage

The oil does build up moisture when cooling off and if you do not run it enough, it stays with the oil. Vehicles that are not driven often or are not driven far do not get a chance to burn this moisture off. Low or no mileage is often worse than high mileage. Just change the oil at least every 6 months... cheap insurance.
