Is there something that outlines the differences between trims? FX4/XLT/Lariat etc

Uh-No. The lower two tone paint is not part of the luxury pack, never was. Any FX4 can have two tone paint. I have personnaly seen 08 FX4's with the lux pack that were not two tone, they were one color.
As for the RSS, that was an option available on any FX4 or XLT or lariat, I believe they were standard on King Ranch's

RSS is available on XLT and higher trims. I've seen it on many XLT's. Think you are right about it being a standard for KR only though.
2-Tone paint can be had from 2004+ and PTM Handles/Mirrors are an option for 2007+ trucks. But they are not necessarily part of the FX4 Lux Package.
My 06 was a solid white FX4 Lux.
