Look great!
Are you planning on clearcoating them or anything to keep the polish as easy maintenance?

I would suggest powder coating them with a clear powder coat. It last forever and the VC will look just polished. I have polished and clear powder coated several things (factory LS1 VCs, and a L98 TPI intake) and it works great.

They definitely look good. How long is your truck going to be out of commission for this project?

I'd suggest doing what RamSS/T suggested. Otherwise it wouldn't really be worth it, because you'll be spending more time polishing than driving.
