Tremic,
I have those same wheels. I have the ProComp 6" with 35 12.5 18 with no rubbing, not even close and did not have to trim anything. Check out the pics. Let us know how your mileage is after this. Mine is 17 hwy and 13.5 city.

update
Ok I have posted A picture of the piece of moulding that I had to trim in my gallery.
As far as fuel economy I don't really know. I never really kept track to start but I am sure it will go down a little around town. But my freeway economy will pick up a little. The tires are a litlle load and yes you can here them inside the cab. But they are a Mud terrain so I expected a little noise. Also Yes the truck rides a little harder now you can deffinatly feel more of the small imperfections in the road that the old setup would soak up. But then again its a truck if I wanted a cadillac I would have bought and Escalade. Overall even after loosing some of my ride quality and noise barrier I love this setup. As far as the same tires mounted on a 17x10 rim. I don't know if they will rub or not. But anytime you go with a wider rim you are comeing closer to the chance of rubbing. All I know is the 17x8 are a safe bet.
