Choosing the right wheels..

I have an 04 FX4 F150 with a 3" skyjack leveling kit. I just got new tires going from 33x12.5x17 cooper STT to 325x70x17 Nitto Terra Grapplers which are pretty much 35x12.5x17. I do not get any rub except when I turn really sharp but the upper ball joints are only about 1/4" away from the tire. I am running the stock 17x7.5 wheels and am thinking that new wheels will be the way to go to get them further away from the joints and not have any more rub. I am looking at 17x9 Incubus Krawler chrome wheels rims 6x135 or something of that sort.
Those have -12 offset which i think should be about 4.5" backspacing bringing the wheel out about an inch. I think the stock wheels are 5.5" BS but am not sure. Would this work while also not getting any fender rub? and any suggestions on wheel type?

Also I was thinking a quick 2" lift kit would give me some more clearance. Would that work well with the 3" leveling kit or no?

I think you should be fine with that wheel and clearance. I have the same truck and am running 35x12.5R20's with the Enkei GRAB6 20x9.5 wheels that have a 33 offset. Mine rubs as well lock to lock for sure, but that is it. GOing with the -12 offset will push it out enough to keep it from rubbing there and should still clear with no problems at all. Worst case you might have to trim a little on the bottom of the front fender where that black plastic trim piece is. Did that to mine and nobody even notices.

Would I be able to get away with 17x10 and what leveling kit or lift did you throw on?

It's gonna be an extremely tight fit with 17x9's. You will need more lift to go with a 10 inch wide wheel.

For right now am I correct in that 17x9 with -12 offset will fit with some trimming on the interior plastics,

I was thinkin Moto Metal MO957 Black Wheel/Rim(s) 6x135 6-135 17

Honestly, I think you are gonna have some serious rubbing. I'd go with a set of 33 inch tires with those wheels.

Ive already got 325/70 on the stock wheels 17x7.5 BS 5.5 if the -12mm offset give me 4.5 in BS wouldnt that only bring it out an inch and get rid of the rubbing lock to lock?

it won't work. that wheel is going to stick out an inch farther and also be an inch and a quarter wider on both sides. most people do not run a wheel with 4.5 in backspacing unless they are lifted. my wheels are 10in.s wide with 5in. backspacing so they stick out as much as the wheels you're looking at will.
