I got a deal on a couple Decellarotors.
I want to just buy new wheel bearings and pull the old ones off and have the new rotors ready packed with greased bearings and ready to slap back on.

My question is this...
the rotors come with bearing races already installed..... so do a need to remove them and install the ones that came with the bearings?

I don't think you'd need to if they are the same. Make sure before doing it though, why the races are there, maybe so people wouldn't just buy the bearings, like thinking for you.
