Bilstein 5100's, 1 inch setting, tire size?

I don't know if this has been done before, and searching didn't yield anything useful, so here's the question: say I do a Bilstein 5100 swap but only use the one inch setting instead of two, and using aftermarket rims (say 18x9 with five inches BS), what tire size should I be looking at? Anyone ever done this?

I know what you're saying, why one inch instead of two? I installed my Bilsteins a couple weeks ago at the two inch setting, and watching two MPG's go with it. I'm hoping I can reclaim a little. Second, I'm worried about towing my trailer around pushing me from being level to bulldog style.

Any advice/size info is appreciated!

If it's a 4x4, you can fit a 35x12.50.

Sorry, forgot to say that, it is a 4x4. Thanks Wandell, you're the man when it comes to tire size advice.
