Sorry I am so naive in this area, but I dont have much experience with truck tire/offset/bs sizes.
Why would the 275/60/20's fit and not the 275/65/20's? They are the same width, just a different height. I am assuming that the extra inch of tire would rub on the front fender corner when you turned?

Right, when you are trying to stuff a large tire on a truck a little bit of extra height can make a huge difference. The problem here is the "odd" tire sizes. So, it's not like a lot of people are running those sizes and can give you a definate answer.
I have the 275/65-20s but i have a 2" leveling kit. Mine dont rub at full turn at all, leveled. I put one of them on w/out my leveling kit to see what it would look like and I believe it would have rubbed. Nothing concrete, just my opinion...

275/60R20 would be ~32.99" in diameter vs my 305/45R22 which is ~32.80"
mine fit just right and could prob spare a good inch or two. the 275/65 are a touch above 34" so you may have clearance probs with a lift IMO. i ran across this site that has a good tire size calculator i hope a lot of you find useful

I have the 275/65/20's along with a 2" leveling kit and the fit is just about perfect. I doubt I'd say that with no leveling kit, though.
You should be safe with 275/60/20's IMO. That's only 1/2-inch more in radius (distance from center of wheel). The width is stock, too, so no issues there.
